If the compressor shuts down on high temperature but the oil and cooler are fine, a drifting sensor is the usual cause. Compare its reading with a thermometer at the same point.

A crushed lead or a connector that has taken oil or water gives erratic readings. Replace the sensor and route the new cable clear of hot pipes.
Fitting tips
Isolate power and let the compressor cool and vent before removing the sensor. Use a new sealing washer or thread sealant suited to the port, tighten on the hex only, and check the reading on the controller after start up.
